Annual plant. Seeds can be used as a seasoning to roast pork, smoked meat, pate, sauces and cakes. Spirit extract and infusion can be used to stimulate the appetite.

Coriander produces seeds which may be chewed to stimulate secretion of gastric juices. An annual which grows 2.5 - 3 ft tall (75 cm - 90 cm) tall, coriander makes a very attractive plant with small purple, pink or white flowers and bright green, feathery foliage. It may be sown outdoors in April in well-drained soil and a sunny position.
The globular, sandy-coloured, ribbed seeds begin to ripen about August developing an agreeable aroma. The plant should then be cut down and the seeds shaken off for use.
It is spicy and very fresh in flavour. The young leaves are chopped and used in middle Eastern and vegetable dishes. The seeds can be used ground or whole in savoury dishes, and have a slight orangy flavour.
